 General Information: Cauliflower is actually a compressed flower in the cabbage family. The white flowerets add a contrast in texture as wel as taste to many dishes.Shopping Tips: Choose cauliflower that's firm and creamy white. Avoid spreading flowerets and yellow leaves. Refrigerate unwashed cauliflower in a plastic bag for up to two weeksCooking Tips: Remove stem, core and outer leaves. Wash throughly under running water. If serving whole, you can leave on some green leaves to add color. Cauliflower can be prepared whole or as flowerets in the microwave or on the stove in 1/2 cup of salt water. For whiter cauliflower, add a tablespoon of milk or lemon juice to the water. Cauliflower can be separated into flowerets and served raw in salads or as an appetizer.
