Assorted Grilling Vegetables It's so easy to grill vegetables with the assorted grilling vegetable in our produce department. Made fresh in-store daily, we've done all the work for you! Just place the veggies on the provided skewers, brush with oil, and season to taste! Soak wooden skewers to make it easier to thread vegetables onto them and to prevent them from burning. Grill veggie kabobs over medium heat for 12 to 14 minutes, or until the vegetables are gently browned. Turn them over only once during cooking. For a little additional variety, add chunks of pineapple to a few kabobs.
In direct heat cooking, food is placed on the cooking rack directly over hot coals. It is the best technique for foods such as hot dogs, steaks, hamburgers, fish, and pork chops, or any main course that is 2 inches thick or less. Fire is built directly underneath the food to be grilled. The food is cooked by direct heat and placed 3 to 6 inches from heat source.
Indirect Grilling With a Charcoal Grill In indirect heat cooking, food is cooked by radiant heat rather than direct heat. This method is best for more delicate foods and for larger cuts of meat that require longer cooking times. Start by building the fire to the sides of where food is to be grilled. Light the charcoal or briquets and allow about 30 minutes for them to reach cooking temperature. When you're ready to cook, place a drip pan between the coals and add 1/2" of water. Place the food over the drip pan and cover the grill. You will need to add more charcoal or briquets about every 45 minutes to maintain even heat.
Indirect Heat Grilling With a Gas Grill
Set the drip pan on the lava rocks on one side of the grill. Preheat the other burner on high for 5-10 minutes. Turn the temperature down to medium, then put the food on the rack over the drip pan and cover the grill.
The most important thing to remember when grilling is to have fun and relax - here are some tips for stress-free grilling
Preheat the grill 10-15 minutes before cooking and spray it with nonstick cooking oil or brush lightly with vegetable oil.
To speed up grilling time, partially pre-cook chicken, potatoes, carrots and other slow cooking food in the microwave.
Brush the foods with sauces during the last 20 minutes of grilling to avoid overcooking.
Instead of using a fork (forks can pierce meat and cause it to loose flavorful juices) use a spatula or tongs to turn the meat.
Never salt meat before grilling. This causes the juices to escape, resulting in the meat drying out.
The best way to determine doneness is by using an instant-read thermometer (see next page for a handy temperature chart!)
Keeping Your Grill Clean
Make sure your grill is sufficiently hot before placing food on it to avoid it sticking. Before you turn it off, use a good quality grill brush to scrape the grate clean. Turn the burners of a gas grill to high for 5 minutes after you've removed the last of your food. This will help burn off any leftover grease and drippings.
Charcoal Grills vs. Gas Grills Gas Grills: Among the most popular and convenient outdoor grills. While they are more expensive, they are far easier to light, provide strong, even heat and offer excellent temperature control. When turning the gas cylinder on or off, remember the rule "Righty, tighty / Lefty, loosey." Charcoal Grills: These grills use either hardwood lump charcoal or charcoal briquets as the fuel source - some grilling fans prefer using charcoal because of the distinctive flavor that it lends to food. Never use lighter fluid to light charcoal grills - it can give food an unpleasant, chemical aftertaste.
Grilling is not only a flavorful and fun way to cook, but can also be a healthier way to eat especially when choosing foods that are low in fat and high in nutrients. Foods cooked in an oven or skillet often sit in their own juices as they cook. While this can add flavor, it also can add unwanted fat and calories. Grilling helps maintain a delicious flavor while allowing fats to drain away from the food. But for true low fat meals, it's best to start with low fat foods. Foods like chicken, seafood and lean cuts of pork and beef (cuts from the round and loin) are healthier grilling choices, and of course so are fruits and veggies. Trimming fat from meat and removing the skin from poultry before grilling further helps to reduce fat content.
Getting Healthy With Marinades, Sauces Instead of coating your foods in barbeque sauce or oily marinades, use marinades and rubs with low fat ingredients such as soy sauce, fruit juices, vinaigrette, liqueurs or wines to reduce calories. Use a cooking spray on the grill grate to help keep foods from sticking rather than brushing them with oil or butter, and top cooked foods with salsas, low fat salad dressing and fresh herbs and spices to manage calories, sodium and fat.

The grill is like an extension of your kitchen - family and friends come together to celebrate everything from holidays to birthdays. Plus it just gives you a great excuse to get outdoors and out of the hot kitchen! Whatever the reason for breaking out your grill, here are some simple tips to follow to make sure you get the most out of your meat and poultry picks.
Tender cuts of beef such as sirloin, tenderloin or rib steaks are great for grilling. Less tender cuts, such as flank steak and top round for London Broil, should be marinated before grilling, however.
Sear the meat to seal in the juices and capture its best flavors. Be sure to turn down the grill after searing so the food does not burn outside and remain raw inside.
Use tongs when turning meat to keep natural juices inside, and turn only once for best results. Never pierce with a fork.
Place the thickest meats over the hottest part of the grill.
Sauces containing sugar and fat will cause flare-ups and the food may burn. Apply sauces and glazes only during the last 10 minutes of cooking time.
Cook ground meat to an internal temperature of at least 165 degrees or until juices run clear.
Allow meat to "rest" before cutting to redistribute the juices.
Chicken breasts (boneless or bone-in), legs, and wings should all be marinated overnight for best results.
Lamb rib is great on the barbecue and lends itself well to all marinades.
Never add salt to a meat or poultry item until after it is grilled - it will dry out the meat and could toughen it.
Grilling can be a great family activity! Here are some quick and easy recipes that the kids can help with. Make sure children are supervised by an adult during these activities. It's important to make the grill area a "no-play zone." Don't allow children to play around the grill - it stays hot long after cooking
Get On The Stick! Get the kids to help prepare their supper by putting cubes of bread, cheese, baby tomatoes and frankfurters onto wooden skewers. Cook on grill over medium heat until the bread starts to toast and the cheese is just starting to melt and ooze. Quick, easy and delicious!
S'mores - On The Grill! You can even make desserts on the grill, like these s'mores! Just stack a graham cracker, piece of chocolate and a marshmallow on a sheet of non-stick foil. Bring up the foil sides, and fold the top and ends to seal into a packet, leaving room for heat circulation inside. Then, grill for 4 to 5 minutes at medium heat (350 to 400 degrees) in a covered grill, and voila! A dessert your whole family will love.
Banana Boat! Take a banana and cut a slit down the length. Don't take off the skin. Fill it with the mini-marshmallows and chocolate chips. After you finish that wrap the banana with tin foil. Put it on the grill for 4 to 5 minutes on medium heat. Use a spoon to eat it out of the skin!
Grilled Cheese - On the Grill! Slice bread, cheese and tomatoes. Lightly butter one side of each of two pieces of bread. Lay bread slices, buttered sides down, on a plate. Top both with cheese and add tomatoes to one. Place bread on the grill over medium heat, buttered side down, and cover. Grill about 2 minutes, until the cheese has melted. Carefully remove from grill and put the sandwich halves together and enjoy.
Frozen Potato Skins
Prepared frozen potato skins are an easy snack. Defrost and toss in a little olive oil, sprinkle on some chili powder and cook on the barbecue until crunchy. Dip into a sour cream dip or a tomato salsa
Fruits It's easy to grill hard fruits like apples, pineapples and pears. Softer fruits like peaches, nectarines, plums, and papaya need to be watched closely to avoid overcooking. Grill fruits when the coals have begun to die out or when placed on the outer edges of the grate. Cut the fruit into pieces that are large enough so they do not fall through the grates. You can also put fruit on skewers that have been soaked in water or a grill basket to prevent small chunks of fruit from falling through the grate. Fruits can be grilled with skins on. Softer fruits benefit from leaving their skins on as it helps maintain their shape and holds them together as they are being grilled. Try brushing cut fruits with melted butter and sprinkling with cinnamon, brown sugar, or lemon juice while grilling.

Grilling Sweet Corn In the Husk: Open husks, remove silks. Brush well with butter and season with BBQ rub, seasonings or fresh herbs. Pull husk back up and tie into place. Place directly on grill and cook 20-25 minutes, turning 3-4 times. For a great salt substitute, try rubbing the corn with a wedge of fresh lime. Husks Removed: Remove husks and silk, brush well with butter, season with BBQ rub, your favorite seasonings or fresh herbs. Seal in foil and grill for 10-15 minutes, turning 2 or 3 times. For a wonderful added flavor, use the juice of a fresh lime instead of salt.
Grilled Pineapple
Peel, core and cut the pineapple into 1/2 inch thick slices. Lightly spray the grill grates with vegetable oil to prevent pineapple from sticking to grill. Grill for about 7 minutes per side or until slightly crisp
Vegetables
Vegetables should be grilled over a medium heat. They should have browned grill marks and be tender when pierced with a fork or the tip of a knife. Soak the veggies in cold water to prevent them from drying out on the grill. As with fruit, skewers are a handy way to cook vegetables. Brushing vegetables with butter or spraying a non-stick cooking spray on the grate before heating grill keeps them from sticking.

Grilling Mixed Vegetables
Rinse vegetables like portabella mushrooms, squash, bell peppers and cut 1/2 inch thick slices or wedges. Place them in foil and drizzle with olive oil, butter or Italian dressing. Season to taste with your favorite seasonings or use fresh rosemary or thyme. Securely wrap in foil and grill 6-8 minutes per side.
